Easy Nutritious Bean Soup

2 cups dried great northern beans
1 smoked ham hock
2 1/2 quarts water
1 Tbsp butter
1 small onion, chopped
1 tsp salt
1/4 tsp black ground pepper
Soak dried great northern beans in water overnight.
Rinse and drain beans. Put beans in a large pot, add water and ham hock.
Cover and bring to boil, then reduce heat and simmer, partially covered, until beans are tender, about 1 1/2 to 2 hours.
Remove ham hock, when cool, remove skin, bone and fat. Cut meat into small pieces and return to soup.
In a medium skillet, saute onions in butter until lightly browned. Add onion, salt and pepper to soup and stir.
Serves 8.

Tangy Garbonzo and Lentil Soup
2 teaspoons olive oil
3/4 cup chopped celery
2 medium yellow onions, chopped
1 large yellow potato, peeled and diced
1 teaspoon curry powder
1 teaspoon ground turmeric
1/4 teaspoon ground cinnamon
1 [28 oz.] can diced plum tomatoes, with juice
1 cup dried, rinsed red lentils
1 cup dried garbonzo beans
1 teaspoon salt
Juice of 1 lemon
1 tablespoon balsamic vinegar
1/2 cup fresh cilantro, chopped
1. Place olive oil in large pot over medium heat; saute celery, onions, and potatoes, along with curry powder, turmeric, and cinnamon, about 5 minutes.
2. Add canned tomatoes and cook for another 10 minutes.
3. Add 8 cups of water and the garbonzo beans, red lentils, and salt.
Bring to a boil, then simmer, partially covered for 45 minutes to 1 hour. [check that there is enough liquid; add 1 extra cup of water if necessary].
4. Just before serving, add lemon juice, balsamic vinegar, and cilantro.
Makes 6 servings.

Country Bean Soup
1 1/4 cup dried great northern beans
5 cups water
1 cup chopped onion
1/2 cup sliced celery [include the leaves]
2 teaspoons ham or chicken bouillon granules
1/4 teaspoon ground black pepper
1 1/2 cups diced ham
1 1/2 cups small new potatoes, cut into 1/4 inch chunks
3/4 cup diced carrots
1 1/2 cups [packed] chopped fresh spinach
1. Rinse the beans well and place in a 4-quart pot. Cover the beans with several inches of water and discard any beans that float to the top. Soak the beans for a least 4 hours, or for as long as 12 hours.
2. Discard the soaking water and return the beans to the pot. Add the 5 cups of water, onions, celery, bouillon granules, and black pepper, and bring to a boil over high heat. Reduce the heat to low, cover, and simmer, stirring occasionally for 1 hour.
3. Add the ham, potatoes, and carrots to the pot, and cook for 45 minutes more or until the beans are soft and the liquid is thick. Add a little more water during cooking if necessary. Add the spinach and cook for an additional 2 minutes, or until the spincah wilts. Serve hot.

Dried Red Beans & Rice
1 cup dried red beans
7 cups water, divided
2 smoked ham hocks

1 medium green pepper, chopped

4 cups hot cooked rice
Place beans in a 3 quart crock pot. Add 4 cups water. Cover and let stand overnight.
Drain and rinse beans, discarding liquid. Return beans to crock pot, add the ham hocks, onion, garlic, cumin and 3 cups of water.
Cover and cook on low for 8-10 hours or until beans are tender.
Remove ham hocks. Cool slightly and remove meat from bones. Finely chop meat and return to crock pot. Stir in the tomato, green pepper and salt.
Cover and cook on high for 30 minutes or until pepper is tender.
Serve with rice. Makes 6 servings.

1 cup uncooked wheat berries [red or white]
1 quart water
1 onion, chopped
1 pound ground beef
1 clove garlic
2 tsp. canola or olive oil
1 large [46 oz.] can tomato juice
1 can [15 oz.] stewed tomatoes
1 tsp. chili powder
Salt and paprika to taste
2 tsp. brown sugar
1/2 tsp. cumin
Cook wheat berries and dried beans together in one quart of water [ may be soaked overnight before cooking].
Cook until almost tender.
In separate pan, saute ground beef, onions and garlic in oil. Drain.
Add to beans and wheat and add other ingredients. Simmer for 1 hour.
Season with salt and paprika.

Broccoli Bean Bake
1 1/2 cup cooked dried northern beans
6 cups broccoli florets
1 small onion, chopped
2 garlic cloves, minced
3 Tablespoons butter or margarine
1 teaspoon oregano
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups [8 oz] shredded cheddar cheese
3 Tablespoons dry bread crumbs
Cook dried northern beans according to directions; then drain.
Place broccoli in a saucepan in 1 inch of water. Bring to a boil, then cover and simmer for 5-8 minutes or until crisp-tender.
In a skillet, saute onion and garlic in 1 Tablespoon butter. Spread in a greased 11 x 7 x 2 baking dish.
Drain broccoli and place over onion mixture.
Top with beans. Sprinkle with oregano, salt, pepper, cheese and bread crumbs.
Melt remaining butter and pour over the top.
Bake uncovered at 375 degrees for 20 minutes or until heated through.
Makes 8 servings

2 hard-cooked eggs, sliced
3 dill or sweet pickles, chopped

2 hard-cooked eggs, each cut into fourths
1/2 shredded Cheddar cheese
Salad greens
Mix mayonnaise, 3 tablespoons cheese, mustard and Worcestershire sauce.
Cover and refrigerate until chilled.
Mix beans, celery, sliced eggs, pickles, onion, salt and pepper; stir in mayonnaise mixture. Garnish with quartered eggs and 1/2 cup cheese.
Serve on salad greens. Makes 4 servings.
