Brunch Rice

1 tsp. margarine
3/4 cup shredded carrots
3/4 cup diced green pepper
3/4 cup sliced fresh mushrooms
6 egg whites, beaten
2 eggs, beaten
1/2 cup skim milk
1/4 tsp. pepper
3 cups cooked organic brown rice
1/2 cup shredded cheddar cheese

Heat margarine in large skillet over medium heat.  Add carrots, green pepper, and mushrooms and cook 2 minutes.  Combine egg whites, eggs, milk, salt and black pepper in a small bowl; and pour over vegetables.  Continue stirring for 2 minutes, then add rice and cheese and continue stirring to gently separate grains.  Heat 2 minutes and serve.  Serves 6.
One serving contains 212 calories, 11.4 g protein, 6.5 g fat, 27.0 carbohydrates, 2.5 g dietary fiber, 353 mg sodium and 79 mg cholesterol.

Adding whole grains to the diet is a necessary part of getting proper nutrition. Whole grains may include organic brown rice, whole wheat bread or pasta, and many other items. The good news is that whole grains taste good as well as being good for you. There are many recipes you can prepare at home using whole grains. Brown rice, for example, is high in fiber and easily incorporated into many recipes.

Vegetable Brown Rice Recipe

~ 2 cups waterorganicbrownricerecipe-healthyfoodmall
~ 1 cup uncooked brown rice
~ ½ tsp. basil
~ 2 medium carrots, peeled and cut into 1-inch strips
~ 1 cup chopped onion
~ ¼ cup chopped green onions
~ ½ cup raisins
~ 2 Tbsp. olive oil
~ 1 10 oz. pack frozen peas, thawed
~ 1 tsp. salt
~ 1 cup pecan halves, toasted

Directions:
1.) In a small saucepan, bring water to a boil.
2.) Stir in rice and basil.
3.) Reduce heat to medium-low; cover and simmer for 30-35 minutes or until rice is tender.
4.) In a large skillet, stir-fry in carrots, onion, green onions and raisins in hot oil for 5-7 minutes or until vegetables are lightly browned.
5.) Add peas and salt.
6.) Cook for 1 minute or until vegetables are tender.
7.) Stir in pecans and rice; heat through.
