Sprouting Seeds In Sprouting Jars

2nd-sprouting-jar1Make sure the seeds are sproutable, which means they are not chemically treated.  The seeds should be washed thoroughly and then soaked overnight in a sprouting jar with a mesh cover.
The duration of soaking depends on the size of the seed.  Small seeds are soaked for 5 hours, medium size for eight hours and beans and grains for 10 to 12 hours.

On the following morning, the seeds should be rinsed and the water drained off. Make sure that not more than one-fourth of the jar is filled with the sprouting seeds.  They will expand about eight times their original size.

The seeds should be rinsed and water drained off three times a day until ready to eat.  Use 1 tsp. of citric acid to 1 quart of water to rinse the seeds to prevent spoilage.

The seeds will germinate and become sprouts in 2 or 3 days. Be sure that the sprouts do not lie in water.  They should be kept well drained.  Sprouts are at their optimum and ready to use when tiny leaves appear at the tips.
Their nutritional value is also optimum.
 
Sprouts should be kept in the refrigerator when they have reached this optimum level and can be kept for several days.

If you don’t live anywhere near the American south, you probably aren’t too familiar with the pecan. The only time it might even cross your path is on a Thanksgiving Day buffet when it’s the main attraction in a pecan pie. But for the southerners of the USA, pecans are a dietary staple. And beyond that, they’re a rich symbolic element of their culture.

To prove just how important this little nut is to the south, 1919 marked the year when the pecan tree was made into the state tree of Texas. And if you find yourself in the southeastern region of Texas, you might just come across the Texas Pecan Festival. This ceremony is held every year. So important was the pecan to Texas governor James Stephen Hogg that he actually requested a pecan tree mark his grave rather than the traditional headstone. Then he specifically requested the nuts be distributed in order to help perpetuate Texas as the “Land of Trees.”

Brunch Rice

1 tsp. margarine
3/4 cup shredded carrots
3/4 cup diced green pepper
3/4 cup sliced fresh mushrooms
6 egg whites, beaten
2 eggs, beaten
1/2 cup skim milk
1/4 tsp. pepper
3 cups cooked organic brown rice
1/2 cup shredded cheddar cheese

Heat margarine in large skillet over medium heat.  Add carrots, green pepper, and mushrooms and cook 2 minutes.  Combine egg whites, eggs, milk, salt and black pepper in a small bowl; and pour over vegetables.  Continue stirring for 2 minutes, then add rice and cheese and continue stirring to gently separate grains.  Heat 2 minutes and serve.  Serves 6.
One serving contains 212 calories, 11.4 g protein, 6.5 g fat, 27.0 carbohydrates, 2.5 g dietary fiber, 353 mg sodium and 79 mg cholesterol.

Do you enjoy cooking so you can eat healthy organic food?   Then you will value this recipe of chili with pinto beans.  Pinto beans are high in protein and high in fiber.  One-half cup of pinto beans contain 7 grams of protein and 7 grams of fiber.  Pinto beans also contain vitamins and minerals, especially potassium which is helpful in lowering high blood pressure. 

Pinto beans are a nutritious healthy organic food.

pinto-beansChili With Pinto Bean Recipe

1 pound lean hamburger
2 cups dried organic pinto beans
1/2 cup chopped onion
1 cup sliced celery
1/2 cup chopped green pepper
1 clove garlic, pressed
1 Tbsp. chili powder
2 tsp. salt
1 tsp. sugar
Dash pepper
1 tsp. Worcestershire sauce
1 can 16 oz. diced tomatoes
1 can 8 oz tomato sauce

Cook pinto beans for 2 minutes, then soak for 1 hour, drain and add 4 1/2 cups water in a 4-quart pot and simmer for 1 to 1 1/2 hours until beans are tender.
Brown hamburger with garlic, celery, green pepper, onion.
Add hamburger mixture and all the remaining ingredients into beans.
Continue to simmer for 1 hour.
