3 slices bacon
1/2 cup chopped onion

1 clove garlic, minced
1 cup organic wild rice
2 1/4 cups water
Salt
1/4 cup pine nuts
1 Tbsp. butter
Cut bacon into 1/8 inch strips and saute in a large skillet until almost cooked. Add the onion, celery and garlic. Cook for five minutes or until onion is soft. Add the rice and water. Season with salt as desired. Cover and simmer for 45 minutes, or until the rice has absorbed the water. Uncover and remove from heat. In a small pan, saute pine nuts in the butter. Add to rice and toss. Serves 6.

Great Northern Dried Beans with Leeks and Bacon
2 cups dried Grean Northern beans
4 slices thick-sliced bacon, diced
2 Tbsp. extra- virgin olive oil
6 cups thinly sliced leeks [2 bunches]
2 garlic cloves, minced
1 tsp. salt
Coarsely ground black pepper
Place beans in a large Dutch oven. Cover with water to 2 inches above beans. Bring to a boil.
Remove from heat and let stand, covered for 1 hour.
Drain beans and return to pot. Cover with cold water and bring to a boil. Lower heat to simmer and cover until tender, 45 to 60 minutes. Drain beans, reserving some cooking water.
Return beans to pot.
Place bacon in a large skillet and cook over medium heat until crisp. Remove with a slotted spoon and set aside. Drain bacon drippings and add olive oil to skillet. Add leeks and garlic and saute for 10 minutes. Add leeks and garlic to beans. Crumble bacon and add to beans with salt and pepper. Add saved cooking water if beans seem dry. Serve hot. Serves 6.

Dash of salt and pepper
In a large bowl, whisk the lime juice, oil, chili powder, salt and pepper.
Add the remaining ingredients and toss to coat.

1 Tbsp. instant beef bouillon
1 tsp. salt
1 tsp. ground cumin
2 medium zucchini, cut into 1/2 inch slices
lemon wedges
Heat water and lentils to boiling in Dutch oven, reduce heat. Cover and cook until lentils are almost tender, about 30 minutes.
Stir in potatoes, onion, celery, garlic, parsley, bouillon, salt and cumin. Cover and cook until potatoes are tender, about 20 minutes.
Stir in zucchini, cover and cook until zucchini is tender, 10 to 15 minutes. Serve with lemon wedges.
Serves 4 or 5.
