Creative Wheat Berry Minestone Soup
Let your imagination go wild when cooking with hard red wheat berries. I recently found this unique recipe that is a healthy nutritious food. Give this recipe a try and your family will be asking you to make this soup often.
Hard red wheat berries are high in protein, minerals and vitamins.
Wheat Berry Minstone Soup
2 Tbsp. canola or olive oil
1 lb. hamburger
3/4 cup chopped onions
1 cup chopped celery
1 1/2 quarts water
1 Tbsp. beef bouillon crystals
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp oregano
1 cup green beans or peas
1/2 cup kidney beans
1 cup hard red wheat berries
1 cup sliced zucchini
1/2 cup shredded cabbage
1/2 cup sliced carrots
1/2 cup minced parsley
1 [15 oz.] can Italian-flavored stewed tomatoes
Brown hamburger and onions in oil; drain grease and add celery, water and beef bouillon. Cover and simmer slowly until celery is tender. Add all remaining ingredients. Cover and simmer for 15 t0 30 minutes.
Makes 8 to 10 servings.
Easy Nutritious Bean Soup

Your family will enjoy eating this healthy nutritious bean soup. It is very easy on the taste buds and easy on the pocket book.
2 cups dried great northern beans
1 smoked ham hock
2 1/2 quarts water
1 Tbsp butter
1 small onion, chopped
1 tsp salt
1/4 tsp black ground pepper
Soak dried great northern beans in water overnight.
Rinse and drain beans. Put beans in a large pot, add water and ham hock.
Cover and bring to boil, then reduce heat and simmer, partially covered, until beans are tender, about 1 1/2 to 2 hours.
Remove ham hock, when cool, remove skin, bone and fat. Cut meat into small pieces and return to soup.
In a medium skillet, saute onions in butter until lightly browned. Add onion, salt and pepper to soup and stir.
Serves 8.
Nutrition Facts per Serving: 340 calories, 7 g fat, 23 g protein, 48 g carbohydrates, 19 g fiber and 420 mg sodium.
